Auguste Cerise arrives this Saturday, 8/20 to help us leave the Summer doldrums behind. Cooler days are coming, my friends! This year we're releasing two quite different iterations of Auguste Cerise: First, a 2021 vintage made with heirloom apples, and double fermented with Balaton and Montmorency sour cherries. Finished a click off bone dry. ABV 8.9% Second, we present to you the first in our Boxcar Series. The Boxcar ciders are all very small, one-off barrel aging projects. So named because our "Barrel Hall" is actually a series of refrigerated boxcar shipping containers, which you see when you visit the Cidery! (And also a reference to The Boxcar Children, naturally.) Boxcar Cerise is 2018 August Cerise laid down in Vino de Naranja casks. Vino de Naranja is a fortified Spanish wine made similarly to sherry but steeped with Seville oranges. Completely dry, slight effervescence, with herbal, toffee and brandied fruit notes. ABV 9.5%

Winesap, Arkansas Black and Cortland apples from the High Plains, pressed in our Cellar, co-fermented with wild dewberries from Free Fleeing Farms. Only 80 cases of this beaut. Notes of green tea, tobacco leaf and fresh raspberry.

HEIRLOOM Cider Release

A classy classic for Fall. Made from American Heirloom and traditional cider varieties, we aged this vintage for 10 months on French Oak. The apples are primarily fermented separately (bittersweets are co-fermented with crabapples) then blended to taste. Our most Champagne-like cider - lovely tannic structure from the bittersweets and the oak aging.

GOLDEN RUSSET Release

Golden Russet is a unique American cider/culinary apple - it's been called the Champagne Apple" - a bit ugly to look at but ferments beautifully. It's my favorite single varietal cider. Un-oaked, aged 11 months in neutral tank, soft acidity and notes of tropical fruit.

We'll have our cyser (honey and cider co-ferment) Honey Thief for you two ways this year: first, our 2021 vintage made with Rome Beauty, Granny Smith, Fuji and Honeycrisp apples, double-fermented with Goodflow Texas honey, then backsweetened with the honey from our estate hives, which are lovingly maintained by local beekeeping extraordinaires, Two Hives Honey. Second, an Estate Cyser (honey used is all from our hives), aged two years in ex-Pinot Noir barrel, 11% and only 22 cases

Cider Noir Release!

This year's Cider Noir comes out Saturday! Cider Noir is our herald of winter and it is back this weekend for your cozying, merrymaking pleasure. Multiple lots of American heirloom apples, double-fermented with extra dark Belgian Candii and steeped with pecans. Belgian Candii, made from beet and date sugar, is a classic component of Dubbel and Trippel Ales. 50% of the cider was aged in cognac, Chardonnay, port, bourbon and rum barrels for 2 years. Dark fruit and coffee notes from the candii combine with ripe pear characteristics from the apples, and the extended aging rounded the stout cider out with complexity and depth. All that is to say, it's our best Cider Noir to date. 11.3% ABV

Dovetail Pommeau Release!

The first pommeau made in Texas and one of very few in the U.S., Dovetail is back this year for our second bottling. Pommeaus are to cider as ports are to wines - ciders fortified with fruit brandy, traditionally made in Northern France. This one began 5 years ago with a small lot of Ben Davis and Rhode Island Greening apples, then we laid down another few barrels of Northern Spy and Wickson, stopping fermentation halfway with fruit brandy. It's been aging ever since in 100% new American oak casks. It's a particularly long amount of time for an American pommeau to age, but I guess we just like what happens when we wait! The result is positively luscious, with notes of honeyed apricot, peach, toffee and soft tannins. Best enjoyed slightly chilled as an aperitif or as a beautiful end to a great meal. ABV 18.7%

Finished a click off bone dry, to avoid the pitfalls of too-sweet cherry ciders. Honeyed cherry on the nose, nectarine on the palate, and a gently tart finish. ABV 8.9%

Honey Thief Cyser Release!

Cyser is the love child of fermented apples and honey. Ours was made this year from Honeycrisp and Fuji and apples double fermented with Goodflow Texas wildflower honey. The result is a brilliant combination of orange blossom, honeysuckle, jasmine, crisp apple and nectarine. The Cyser was delicately back-sweetened with a touch of honey adding a slight silkiness to the finish. Pairs perfectly with duck, pork, shrimp and crab.
